Arguably, one of the oldest foods known to mankind - Eggs play an important role in our lives and health. Today being International Egg Day, we are egg-cited to share with you some of the most delectable egg recipes by Indian Food influencers and bloggers.

On a side note, eggs are rich sources of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper. But do you know what's the best part? That Minty Creamy Low GI Friendly Egg Masala - Done Just before lockdown I stocked up on just enough essentials to last us a month. I bought vegetables that last long (elephant foot yam, cauliflower, cabbage, bitter gourds, bottle gourds, pumpkin & green tomatoes (so they ripened slowly). I also bought chicken, prawns, fish, eggs & milk. I did this because I'm cooking food for certain senior citizens & I needed to stock enough. I didn't hoard. I suggest you don't either. Our Government is doing a fantastic job. Lets help them by conserving everything so that you don't need to go outdoors too many times. I'm cooking every alternate day & the rotis you see in this photo are rotis that I made yesterday - that's why they're looking darker than usual. Just as yum once reheated though. I made this egg curry for everyone's dinner today On a separate note - I'm getting DM's on how we're exchanging food safely. I pack everything in those disposable paper containers & leave it outside each senior citizens door. Once I leave I text them to take the food in. We don't see each other. I come home, wash my hands thoroughly, wipe down the elevator buttons, door handles with dettol. Simple I hard boiled eggs & set aside I tempered oil with cloves, pepper corns, ginger-garlic pastes, onions & cashews. Once cool, I ground to a very smooth paste along with milk, fresh coriander, green chillies, mint, tamarind pulp & salt I tempered oil with black cardamom & cinnamon and & simmered the smooth paste till it thickened. I added more milk & the boiled eggs & cooked till thick & creamy Such a fresh meal with just a hint of mint to add extra freshness & the perfect accompaniment to leftover parathas, onions & lime What are you cooking these days during these trying times?

Egg Idli is basically eggs cooked in a an idli pan and then tossed with a spicy masala. It is  great healthy dish to make for breakfast. Here is how to make it. Detailed recipe link - https://www.whiskaffair.com/egg-idli-recipe/ Ingredients  6 Eggs 1 tbsp Vegetable Oil 1 tsp Mustard Seeds 10-12 Curry Leaves 1 Dry Red Chillies (broken) 1/2 tsp Red Chilli Powder 1/2 tsp Turmeric Powder Instructions Heat water in a idli steamer. Grease the idli moulds with oil. Break one egg in each mould and sprinkle with salt and black pepper. Steam until eggs are set (10-12 mins). Heat vegetable oil in a pan. Once the oil is hot, add mustard seeds, curry leaves, dry red chilies, red chilli powder and turmeric powder and fry for a few seconds. Add the egg idli in the masala and toss well very gently. Garnish with fresh coriander and serve hot. Notes Don't over steam the eggs otherwise they will become chewy. #eggrecipes #eggbreakfast #indianeggrecipes #eggsoldiers #idli
