Some of our most popular #recipes are waffles, so today we are going to fully embrace #wafflewednesday, and are kicking things off with our most liked post of the year (so far), these Mini Vegan Sweetheart Waffles- naturally colored with BEETS! ??? - Get the full #recipe below,??and check back later for a new waffle recipe featuring TOMATOES! ? You really can do sooo much with #waffles! ?? - WHAT YOU NEED: ? 3/4 c whole wheat flour, 1/4 c white flour, 1/2 c cornmeal, 1/2 c cornstarch, 1 tsp baking powder, 1/2 tsp baking soda, 1/4 tsp salt, 6 tbsp melted @earthbalance butter, 2 flax eggs, 1 and 3/4 c milk of choice (we used @ripplefoods), 1/2 tbsp apple cider vinegar, 1/4 c canola oil, 1- 2 tbsp pure maple syrup, 1 and 1/2 tbsp vanilla extract and for the pink color: a couple small #beets (peeled) and if desired 3/4 c chopped strawberries. ? Note: amount of beets dependent on preferred color of waffles. - HOW YOU MAKE THEM: ? In a mixing bowl combine flours, cornmeal, cornstarch, baking powder, baking soda, and salt. Whisk to combine. ? In a separate bowl, combine (melted) butter, eggs, milk, vinegar and oil. Whisk. ? Add maple syrup and vanilla extract and whisk again until smooth. ? Next, add wet ingredients to the dry. Mix until well incorporated. Set batter out on the counter for approx. 20 min. ? While batter sits, steam beets. Then, pulse in a high-powered blender until smooth (if using strawberries add them here). Add water as necessary to thin. *You want mixture to be thick but pourable. ? Add beet puree to waffle mix. Once desired color of batter is achieved, cook waffles per your waffle iron’s instructions. We used the Dash White Mini Waffle Maker from @crateandbarrel for these. ?Repeat until all batter is used. Top with #dairyfree yogurt, coconut whipped cream, bee pollen, fresh fruit, etc. ? Ingredients 2 cups Plain flour 1 teaspoon salt 4 teaspoons baking powder 2 tablespoons white sugar 2 eggs 1 1/2 cups warm milk 1/3 cup butter, melted 1 teaspoon vanilla extract Method 1. In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature. 2. In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended. 3. Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Savory Cheese Chive Waffles from Your Lighter Side⁠ ⁠ 1 cup processed, raw cauliflower (should resemble coarse crumbs)⁠ 1 cup processed mozzarella shredded cheese⁠ 1/3 cup Parmesan cheese/shredded⁠ 2 eggs⁠ 1 tsp garlic powder⁠ 1 tsp onion powder⁠ 1/2 tsp pepper⁠ 1 Tbsp chives⁠ fresh parsley, optional⁠ sun-dried tomatoes, optional⁠ ⁠ Heat waffle maker until ready. Add scant 1/4 cups filled with batter on the griddle. Set the timer for 4-6 minutes, peeking after minute four. If the waffle maker sticks, let cook slightly longer. Remove once cooked. allow to cool on a plate. Simple & delicious gingerbread waffles – vegan & gluten free! A festive breakfast treat made extra special with our heavenly Gingerbread Syrup ? ⁠ ⁠ Thanks for the lovely pic @romylondonuk ?⁠ ⁠ Serves 3⁠ 200g oat flour⁠ 1/2 tsp baking soda⁠ 1 tsp baking powder⁠ 2 tsp ground ginger⁠ 2 tsp cinnamon⁠ a pinch of nutmeg⁠ a pinch of ground clove⁠ 2 tbsp ground flaxseeds⁠ 2 tbsp Sweet Freedom Gingerbread Syrup⁠ (currently a special buy in @aldiuk stores!) ?⁠ 300ml soy milk⁠ 200ml water⁠ ⁠ Combine all dry ingredients in a bowl, including the spices and stir to combine.⁠ Create a well in the dry ingredients and pour in the Gingerbread Syrup and plant milk. Stir until combined and set aside for 10 minutes⁠ Pour 200ml water into the mix and blend to combine.
